Lemon Cloud

 

Prepare a package of MyTFine Lemon Pudding and Pie mix according to package instructions EXCEPT reduce the sugar to half of what they say.

When the pudding is done, leave it in the pot, but give it a good stir every 10 minutes or so until it is nearly at room temperature.  You’re trying to keep it from “setting up”.

Whip 1 ½ c of heavy cream to stiff peaks and fold it into the lemon pudding in thirds.  (First third gets stirred in, 2nd two you try to fold gently.) .  It’s OK if there are some streaks. 

Layer it immediately into serving dishes placing crumbled cookies, meringues, macaroons, cake crumbs, graham crackers or other such in between the layers.  We topped it w/ a blackberry and served w/ more meringues on the side.
