Thai Grilled Shrimp

Served with rice will feed 8-10

Mix together:

2 lbs of raw shrimp, tails on

2 Tablespoons of Thai Spice Mix -- any brand, available in the spice section of any supermarket

Juice of 1 lime

 

Let marinate for several hours.  Grill the shrimp briefly on a hot grill.  Do not overcook.

 

Mix together in a saucepan:

1 can coconut milk (NOT coconut cream -- which is sweetened)

1 Tablespoon red Thai curry paste -- again, available in most supermarkets in the Asian foods section

1 teaspoon peanut butter

2 Tablespoons white wine

 

Simmer briefly over low heat.

 

Plate the shrimp on a bed of lettuce w/ celery sticks and red pepper strips w/ the sauce served separately. 

Serve at room temperature.
